Egg Sandwich – 2 Ways

This post contains two very delicious Egg Sandwich recipes which are very easy to put together and will be a great dish for brunch or breakfast.

I love a savory breakfast any day than a sweet one. Sipping on hot tea or coffee after a flavorful, savory breakfast definitely hits the spot.

I got a few requests for egg sandwich after I posted my meal prepping video. I make egg sandwich in a variety of ways, but these both are the egg mayo sandwiches I make very often.

Both the versions are easy to put together and I usually assemble the sandwich a day before, wrap it in cling wrap and have it the next morning by just toasting the bread in butter. This way I will not have much work prepping breakfast amidst the morning school rush.

Egg Sandwich - 2 ways

Ingredients
  

For Basic Egg Mayo Sandwich:

  • 2 Hard boiled eggs
  • 1 Tbsp chopped onions
  • 1-2 green chillies chopped
  • 1 Tbsp coriander leaves chopped
  • 1 garlic minced
  • 1 Tsp lemon juice
  • salt to taste
  • black pepper
  • 2 Tbsp mayonnaise (I used Kewpie mayo)
  • red chilli flakes
  • 4 Slices bread
  • butter to toast bread

For Grated Egg Avocado Sandwich:

  • 1 Hard boiled egg
  • ½ avocado
  • pickled jalapeños
  • 1 Tsp lemon juice
  • red chilli flakes
  • salt to taste
  • pepper
  • cream cheese
  • Chilli mayo/ kewpie mayo/ plain mayo
  • butter
  • 2 Slices bread

Instructions
 

For Basic Egg Mayo Sandwich:

  • Mash egg with a fork or cut into small pieces.
  • Add all ingredients for this into the egg and mix well.
  • Spread the egg mixture on one side of the bread, close with another bread and toast it in butter.

For Grated Egg Avocado Sandwich:

  • Spread cream cheese spread on one side of toasted bread.
  • Slice avocado and place it on the bread.
  • Add red chilli flakes, lemon juice, jalapenos, salt and pepper.
  • Grate the boiled egg on top of the avocado.
  • Squeeze mayo on top of egg.
  • Close with another slice of bread. Serve.
  • Olives, onions, cucumbers etc can be added.
