Homemade Granola

Homemade Granola

Ingredients
  

  • cups rolled oats
  • ½ cup chopped almonds
  • ½ cup chopped cashews
  • ¼ cup pumpkin seeds
  • ¼ cup chopped pistachios/walnuts
  • 2 tbsp sesame seeds
  • 1 tbsp ground flaxseeds (optional)
  • 1 or½ tsp cinnamon
  • ½ tsp salt
  • 2 tbsp coconut oil odourless is better
  • 3 tbsp honey, maple syrup, date syrup
  • 1 tsp vanilla extract

Instructions
 

Preheat the oven

  • Set oven to 160°C (320°F). Line a baking tray with parchment paper.

Mix the dry ingredients

  • In a large bowl, combine: Oats, Almonds, Cashews, Pumpkin seeds,Pistachios, Sesame seeds, Flaxseed (if using)Cinnamon, Salt

Prepare the wet mixture

  • In a small microwave-safe bowl or saucepan, gently warm:Coconut oil, Maple syrup/date syrup/honey. Stir until combined.
    Add vanilla extract.
  • Pour the wet mixture over the dry ingredients. Stir thoroughly until everything is evenly coated.
  • Spread mixture in an even layer.
  • Press it down lightly with a spoon or spatula.
  • Bake for 18–22 minutes.
  • Stir once around the 10–12 minute mark for even browning.
  • For bigger clusters, only stir the edges and leave most of the tray undisturbed.
  • Remove from oven. Don’t touch it for 20–30 minutes.As it cools, it will become much crunchier.
  • Keep in an airtight container at room temperature for up to 2–3 weeks.
  • Enjoy it with Greek yogurt, milk, or sprinkled over fruit.
