Chocolate Stuffed Pancakes

Ingredients
  

Dry Ingredients:

  • 95 g all purpose flour ¾ cup
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 2 tbsp sugar
  • Pinch of salt

Wet Ingredients:

  • 1 large egg
  • 80 g greek yoghurt ⅓ cup
  • 55-60 ml milk adjust as required
  • 1 tbsp oil
  • ½ tsp vanilla

Other ingredients:

  • chocolate hazelnut spread
  • ghee/butter

Instructions
 

  • Whisk dry ingredients together
  • Whisk wet ingredients together
  • Combine both gently.
  • Heat a non-stick pan over medium-low heat and lightly grease with butter or ghee.
  • Using a small cookie scoop or spoon, pour a small amount of batter onto the pan
  • Place a spoonful of chocolate spread in the center of the batter, keeping it away from the edges.
  • Gently add a little more batter on top to fully cover the chocolate.
  • Cook on medium-low heat until bubbles appear on the surface and the bottom turns golden brown.
  • Carefully flip the pancake and cook the other side until golden and cooked through.
  • Remove from the pan and serve immediately while the chocolate center is still soft and melted.
