Soft, fluffy homemade buns filled with juicy, flavorful chicken and a creamy sauce.
There’s something so special about freshly baked buns straight out of the oven — soft, warm, and filled with flavor. These soft chicken buns are one of those recipes that feel comforting, satisfying, and just a little indulgent.
The dough comes out beautifully soft and light, while the chicken is packed with flavor thanks to a simple marinade of garlic, ginger, soy sauce, and spices. Once baked and filled, every bite is warm, savory, and incredibly satisfying.

Crispy Cloud Chicken Sandwich
Ingredients
For Chicken:
- 450 grams chicken
- 1 tsp red chilli powder
- 1 tsp paprika
- black pepper
- 1 tsp garlic powder
- 1 tbsp oyster sauce
- 2 tsp soya sauce
- 1 egg
- Salt to taste
For the flour mix
- 1 cup all purpose flour
- 2 tbsp corn flour
- Black pepper
- 1 tsp garlic powder
- 1 tsp paprika powder
- Salt to taste
For the dough:
- 400 g all purpose flour
- 2 tsp instant yeast
- 1 tsp salt
- 2 tbsp sugar
- 15 g soft butter
- 2 tbsp oil
- 1 large egg
- 150 ml lukewarm milk
- 80 ml lukewarm water
For topping:
- milk
- bread crumbs
For the sauce:
- 2 tb sp greek yoghurt
- 2 tbsp mayonnaise
- 1 tsp lemon juice
- 1 clove garlic crushed
- black pepper
- salt to taste
Instructions
Marinate the chicken:
- Marinate chicken with all the ingredients. Keep for 2 hours or overnight.
- Milk ingredients for flour mix in a separate bowl .
- Dip the chicken in flour mix and deep fry it in oil.
Make the buns:
- Mix all dough ingredients and knead for about 10 minutes until soft and elastic.
- Lightly oil, cover, and let rise in a warm place for 1 hour.
- Divide into 10 balls. Let rest 10 minutes.Roll each into a thin circle and fold double. Place on a baking tray with baking paper.
- Cover and let rise another 25 minutes.
- Preheat oven to 200°C. Brush buns with milk.Sprinkle with bread crumbs.Bake for 10–12 minutes (top & bottom heat).
- Cover immediately with a clean cloth after baking to keep them soft.
Prepare the sauce:
- Mix all sauce ingredients: mayo, Greek yogurt, salt, lemon juice, garlic, and pepper.
Final step
- Slice the warm buns open and fill with the cooked chicken, lettuce, and sauce.I also added sriracha sauce and pickled chillies.
