Egg Sandwich - 2 ways
This post contains two very delicious Egg Sandwich recipes which are very easy to put together and will be a great dish for brunch or breakfast.
For Basic Egg Mayo Sandwich:
- 2 Hard boiled eggs
- 1 Tbsp chopped onions
- 1-2 green chillies chopped
- 1 Tbsp coriander leaves chopped
- 1 garlic minced
- 1 Tsp lemon juice
- salt to taste
- black pepper
- 2 Tbsp mayonnaise (I used Kewpie mayo)
- red chilli flakes
- 4 Slices bread
- butter to toast bread
For Grated Egg Avocado Sandwich:
- 1 Hard boiled egg
- ½ avocado
- pickled jalapeños
- 1 Tsp lemon juice
- red chilli flakes
- salt to taste
- pepper
- cream cheese
- Chilli mayo/ kewpie mayo/ plain mayo
- butter
- 2 Slices bread
For Basic Egg Mayo Sandwich:
Mash egg with a fork or cut into small pieces.
Add all ingredients for this into the egg and mix well.
Spread the egg mixture on one side of the bread, close with another bread and toast it in butter.
For Grated Egg Avocado Sandwich:
Spread cream cheese spread on one side of toasted bread.
Slice avocado and place it on the bread.
Add red chilli flakes, lemon juice, jalapenos, salt and pepper.
Grate the boiled egg on top of the avocado.
Squeeze mayo on top of egg.
Close with another slice of bread. Serve.
Olives, onions, cucumbers etc can be added.
