Ragi Cake

Ingredients

  • 12 220g mejdool dates
  • cups hot milk
  • ½ cup vegetable oil/ melted butter
  • ½ cup ragi flour
  • ½ cup whole wheat flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla extract
  • ½ cup walnuts
  • chocolate chips

Instructions

  • Pour hot milk into a bowl with pitted dates. keep it for 20 minutes. Blend it well until smooth.
  • Pour oil into the dates milk.
  • In a separate bowl, add flours, baking powder, baking soda and salt in a bowl and whisk.
  • Pour the dates mix into the flours and mix well.
  • Add walnut and chocolate chips and mix gently.
  • Line a 7 inch baking tray or loaf pan with baking paper and pour the batter into it.
  • You can add more walnuts and chocolate chips on top and bake at 180°C for 40 minutes until a toothpick inserted inside comes out clean.
