Roasted Chicken Legs

Ingredients

INGREDIENTS

  • 4 chicken leg quarters skin on
  • 6-7 cloves garlic
  • 3 green chillies
  • 6 tbsp butter or olive oil
  • 1/2 tsp oregano
  • 1 1/2 tsp pepper
  • 1 egg
  • Juice of half a lemon
  • Salt to taste

Instructions

DIRECTIONS

  • Set the broiler temperature at 400F.
  • Grind the garlic and green chilly into a paste and place in a bowl.
  • Add in the melted butter or olive oil, followed by all the other ingredients.
  • Pour this marinade over the chicken pieces and spread this evenly over and under the skin very well. Marinate for about 3-4 hrs.
  • Just before roasting place 1-2 cloves of garlic and few cubes of butter under the skin. This will make the meat very moist and juicy.
  • Take a baking pan and place 2-3 pita bread at the bottom. Place the chicken along with few potatoes sliced in thick rounds. I added the left over marinade on the potatoes and mixed it well.
  • Bake the chicken, uncovered, for 35 to 40 minutes or until the chicken is no longer pink inside and the skin turns crisp. Don’t forget to turn the chicken once.

Notes

✔ Chicken leg quarters means chicken legs along with thighs.
✔ Baking time may differ depending on the oven. So just keep checking if the chicken is done after 20 mins.
✔ I roasted the chicken in the convection microwave oven. It had an option for roasting chicken and it came out very crisp and juicy.
✔ Serve the chicken along with garlic bread, some salad or coleslaw and french fries.
