African Mandazi

East African Mandazi is a doughnut like deep fried delight which has cinnamon flavor to it. It can be eaten for breakfast alongside hot tea.

Ingredients

  • 3 Cups all purpose flour
  • 2 Tsp baking powder
  • ¼ Tsp cinnamon powder/ cardamom powder
  • pinch of salt
  • ½ Cup sugar
  • ½ Cup milk/ coconut milk
  • 1 egg
  • 2 Tbsp oil/ melted butter
  • powdered sugar

Instructions

  • In a bowl add flour, baking powder, cinnamon powder and salt. Mix
  • In another bowl add sugar, milk, egg and oil and whisk until well combined.
  • POur the wet mixture into the dry mix.
  • Mix well first with a spoon and then knead it with hands for 5 minutes.
  • Let the dough rest for an hour.
  • Divide the dough into two. Roll out the dough into 1 inch thickness.
  • Cut the dough into cubes and deep fry until golden brown on both sides for 2 minutes.
  • Dust it with powdered sugar and it’s ready to eat.
